Gluten & Butter-Free Coffee Chocolate Brownies

The ingredients for this incredible brownie recipe include chickpeas, black beans, honey, and tahini. The high protein, dietary fiber, and mineral content of chickpeas is beneficial for the health of bones, muscles, and skin. Antioxidants, fiber, and proteins are also abundant in black beans. They’re incredibly healthy, providing multiple vital nutrients with minimal fat and sugar. . Last but not least, the addition of tahini in place of butter makes these brownies much more delicious, appealing, and flavourful.

Ingredients:

For cake batter

  • 1 cup of cooked chickpeas (drained & rinsed)
  • 1/4 cup of cooked black beans (drained & rinsed)
  • 1/4 cup of rice flour or almond flour
  • 1 tsp of baking powder
  • 1/2 cup of tahini (use thicker paste)
  • 1/4 cup of honey
  • 1 tsp vanilla extra
  • 1/4 cup of cocoa powder
  • 1/2 cup of chocolate chips
  • 1/4 tsp salt

Canadian Ice WIne

For flavouring (optional)

  • 1 sachet of M+H Canadian Ice Wine Coffee
  • 1/4 cup of hot water
  • 1 Tbsp of Rum
  • 1 tsp of honey

Instructions:

  1. Preheat oven to 350F.
  2. In a food processor, blend all the ingredients except chocolate chips. Scraping down sides as necessary until smooth.
  3. Once the batter is creamy and smooth, take the lid off, remove the blade, and stir in 80% of the chocolate chips.
  4. Pour into greased pan and sprinkle the remaining 20% of chocolate chips on the top of the cake batter.
  5. Bake for 20 mins (depending on the thickness)
  6. Use hot water to brew a highly concentrated Ice wine coffee. Cooled coffee is combined with rum and honey. Stir it well.
  7. Pour the coffee mixture over the brownies to give them an extra scent and flavour boost.
